Tomato, Lentil, and Cheddar Soup


3 cans            Fire Roasted Tomatoes

1 can                        Lentils, rinsed and drained

1 tbsp                        Italian Seasoning

2 cloves            Fresh Garlic, minced

2 tbsp                        Olive Oil

1 can                        Tomato Paste

½ med            Spanish onion, chopped

1 tsp                        Each, Coriander, Cumin

2 tbsp                        Each, Brown Sugar and Balsamic Vinegar

1 cup                        Cheddar Cheese, grated

Salt and Pepper to taste


In a pot, place all ingredients minus the cheddar cheese. Bring this to a boil and allow to simmer for 20-30 minutes. Puree using a blender or immersion blender and can be thinned out with a bit of vegetable stock. Whisk in cheddar cheese right before serving just until melted. Adjust seasonings as needed and serve.
